šŸ«Toffee Brownie Cheesecake Bars — Almost Too Good to Give Away

3 min read

If chocolate, cheesecake and buttery toffee had a love language, I’m pretty sure this would be it. šŸ˜‚

I came across these Toffee Brownie Cheesecake BarsĀ from Tastefully Simple and immediately thought two things:

First: Oh my goodness, I need to make these.

And second: Wouldn’t these be adorable packaged in a Stampin’ Up! White Gable Box?!

This is exactly the kind of recipe I love—something that looks and tastes extra special, but starts with a mix that makes life a whole lot easier.

As a Tastefully Simple Ambassador andĀ a Stampin’ Up! demonstrator, I especially love when my two worlds collide. A delicious homemade treat + pretty paper + a cute tag = a gift I’d be thrilled to give…or receive!

Toffee Brownie Cheesecake Bars

Recipe from Tastefully Simple

Makes:Ā 12 servings

Bake temperature: 350°F

What You’ll Need

  • 1 package Tastefully Simple Toffee Brownie Bar Mix

  • 10 tablespoons butter, divided and softened

  • 2 large eggs, divided and beaten

  • 1 (8-ounce) package cream cheese, softened

  • ½ cup granulated sugar

  • 1 teaspoon pure vanilla extract

  • 1 cup semi-sweet chocolate chips

How to Make Them

Preheat your oven to 350°F.

Combine Packet 1Ā from the Toffee Brownie Bar Mix with 4 tablespoons softened butter. Mix with a fork until small crumbles form. Press firmly and evenly into a greased 8x8-inch baking pan and bake for 10–15 minutes. Remove from the oven.

Meanwhile, combine Packet 2, 6 tablespoons softened butter and 1 beaten egg. Stir until well blended, then reserve about ā…“ cup of the brownie batter.

In a separate bowl, beat the cream cheese until light and fluffy. Add the sugar and beat until combined. Add the remaining egg and vanilla, blending until smooth. Stir in the chocolate chips.

Add the cream cheese mixture to the brownie mixture and stir to combine. Spread over the baked toffee base. Dollop the reserved brownie batter over the top.

Bake for 30–35 minutes.

Cool at room temperature for about 30 minutes, then refrigerate until completely cooled before cutting. Store the bars refrigerated.

šŸŽ A Little Kim’s Creative Kitchen Idea

Now THIS is where my paper-crafting brain takes over!

I can picture two or three of these decadent little bars tucked into an airtight food-safe bag, then nestled inside one of Stampin’ Up!’s White Gable Boxes.

And that plain white box? It’s practically begging to be decorated.

Wrap a strip of seasonal Designer Series Paper around the box, add coordinating ribbon or twine and finish it with a cute stamped tag.

For fall:

ā€œSo thankful for you.ā€ šŸ‚

For Christmas:

ā€œHave yourself a sweet little Christmas.ā€ šŸŽ„

For a birthday:

ā€œCalories don’t count on your birthday.ā€ šŸ˜‚

Or keep it simple:

ā€œMade with love…just for you.ā€ ā¤ļø

Change the paper and tag with the seasons, and the exact same idea works all year long.

One recipe. One little box. So many gift possibilities.

These would make such a sweet hostess gift, teacher treat, neighbor surprise, thank-you gift—or a little just becauseĀ treat for someone who could use a smile.

The Easy Little Secret

The star of the recipe is Tastefully Simple’s Toffee Brownie Bar Mix. You get those wonderful layers of buttery toffee and rich brownie without starting everything from scratch.

You can find the mix in my Tastefully Simple shop:

And if you want to turn your brownies into an adorable handcrafted gift, you can shop my Stampin’ Up! store for the White Gable Boxes, Designer Series Paper, ribbon and everything you need to dress them up.
