Welcome back to Kim's Kitchen!

October is here, and you know what that means? It's officially CROCKTOBER!Ā šŸ

There is something wonderful about coming home after a busy day to the smell of dinner that's been simmering away in the slow cooker. The house smells amazing, dinner is practically done, and you can spend less time in the kitchen and more time doing the things you love!

That's why I'm excited to share Tastefully Simple's Crocktober — 31 Days of Slow Cooker Meals!

That's right! A whole month of delicious slow cooker inspiration to help take the guesswork out of that age-old question:

"What's for dinner tonight?"Ā šŸ˜‚

Whether you're feeding a hungry family, planning meals for the week, or simply looking for something new to try, there's nothing quite like the convenience of a slow cooker.

šŸŽ Featured Crocktober Recipe: Apple Berry Pulled Pork Sandwiches

Oh my goodness, doesn't this sound delicious?!

Tender, slow-cooked pulled pork tossed in a sweet and savory Spiced Apple Berry Sauce, piled onto toasted brioche buns, and topped with a flavorful coleslaw and crispy fried onions.

Sweet, savory, crunchy, and absolutely perfect for a fall dinner!

And the best part? Your slow cooker does most of the work!

šŸ›’ Ingredients

  • 1 cup hot water

  • 1 tablespoon Tastefully Simple Onion Onionā„¢ Seasoning

  • 1 (3-pound) pork shoulder roast, cut into 4 sections

  • 3 teaspoons Tastefully Simple Seasoned Pepper, divided

  • 1 package (16 ounces) tri-color coleslaw mix (no dressing)

  • 1 bottle Tastefully Simple Spiced Apple Berry Sauce, divided

  • ¼ cup mayonnaise

  • 6 brioche hamburger buns, toasted

  • 1 package (2.8 ounces) crispy fried onions, toasted

šŸ‘©ā€šŸ³ Let's Get Cooking!

Step 1:Ā In a 6-quart or larger slow cooker, combine the hot water and Onion Onionā„¢ Seasoning. Season the pork roast with 2 teaspoons of Seasoned Pepper and place it in the cooker. Cover and cook on LOW for 8–10 hours.

Step 2: In a large bowl, combine the coleslaw mix, mayonnaise, ¼ cup Spiced Apple Berry Sauce, and the remaining teaspoon of Seasoned Pepper. Toss well and refrigerate until ready to serve.

Step 3:Ā When the pork is finished cooking, remove it from the slow cooker and drain off the cooking liquid.

Step 4:Ā Shred the pork and return it to the slow cooker. Stir in the remaining Spiced Apple Berry Sauce and simmer on LOW for another 30 minutes.

Step 5:Ā Pile that delicious pulled pork onto toasted brioche buns. Top with the prepared coleslaw and crispy fried onions.

Dinner is served!Ā šŸ˜‹
